I originally started drinking Shakeology to lose weight so I used it to replace one meal a day. I liked to vary the meal as opposed to always replacing the same meal each day and I successfully lost that 10-15 extra pounds I had to lose!!  I now usually use Shakeology as a healthy supplement or snack, sometimes using it as a meal on the run. Healthy Dessert

Fall is upon us, and who doesn't love a warm Apple Crumble??
Set it and forget it. YUM

Slow Cooker Apple Granola Crumble

Ingredients
·        2 Granny Smith apples
·        1 cup of your favorite granola cereal (I mixed 1/2 cup granola and 1/2 cup bran flakes)
·        1/8 cup Maple Syruphttp://ir-na.amazon-adsystem.com/e/ir?t=veinthfr0a-20&l=ur2&o=1
·        1/4 cup apple juice
·        2 Tablespoon vegan butter
·        1 teaspoon cinnamon
·        1/2 teaspoon nutmeg

Directions
Peel, core and cut the apples into thick slices and then chunks. This is what I did. Cut the apple in half - then half again and then those halves in half. This gives you 8 thick slices. Cut those thick slices in chunks - like about 3 per slice.
Add everything to the crockpot and stir well.
Cover and cook on low 4 hours.
That is it!

Ready to enjoy and it will keep in the refrigerator for 3 days.

Beachbody Coach - What coaching has done for me

I'm not sure how many people actually get to do what they love, but I do. I'm not sure if you had asked me 5 years ago, or even a year ago if I really thought I could do that, if I would have said yes. Did I think I had the ability to do something I love, sure. Did I think I would really be able to do that and so much more? I'm not sure..but I knew if I never tried, the answer would always be no. I thought not having a college degree would limit me or hold me back in life. I didn't know if following a dream or being happy in what I was doing would bring me financial freedom. I looked around at other people and thought they are lucky, or they have this, or they have that going for them. I was selling myself short. Those people weren't lucky, those people were driven. They didn't have anything that I didn't have, they had just been doing things longer. They had let go of 'self doubt' and that was exactly what I needed to do. I was ME, and no one could be better at me than ME! So when Mike said 'do what makes you happy', I did just that! I'll admit, I started with baby steps not completely trusting the process...but it wasn't until I learned to just be ME, to accept the up and downs as a part of the process, to just keep doing what I was doing and all of the work would pay off. When the focus is right, magic starts to happen. It's as simple as just trying to help people. I left my full time job last August, and took a part time job to allow more time to focus on my 'dream job', being a full time Beachbody coach, where helping others achieve goals was the most important thing...where I am able to focus on health and fitness and things that truly matter to me, things I like, things that make me happy.

I'm a so excited to announce that in just over a year, I am a success business owner. I have more than replaced my salary at my 'full time' job where I had over 17 years of experience working 9-5, 40hrs. or more a week. I no longer have to be part of the rat race. I have the freedom and flexibility to work from home, make my own schedule, be my own boss, help others, all while having the financial freedom to so. That's right, I did it, and so can you. Fun Healthy Appetizers

Pinwheels:

Turkey and Hummus Pinwheel

Ingredients:...
4 corn tortillas or whole grain flatbreads
1 cup hummus
8 ounces sliced turkey 
1 red peppers, chopped 
4 ounces baby spinach (about 2 cups)


Preparation:
1. Place 1 tortilla on cutting board and spread 1/4 cup hummus in an even layer. Arrange turkey slices over bottom two-thirds of tortilla. Lay peppers over hummus. Scatter spinach over peppers.

2. Starting from bottom, roll tightly. Wrap securely in plastic. Repeat with remaining ingredients.
3. Refrigerate sandwiches for 30 minutes before unwrapping and cutting into quarters.


Avocado Dip:

Ingredients
• 2/3 cup grape tomatoes, chopped (10 to 12)
• 1/2 cup finely chopped pineapple...
• 3 medium avocados, diced
• 1/2 finely chopped sweet onion, such as Vidalia
• 1/8 cup finely chopped fresh cilantro
• 1 tablespoon lime juice
• 1 teaspoon crushed red pepper flakes
• 1/4 teaspoon garlic salt
• Black pepper
• Corn tortilla chips or homemade pita chips, for serving
Directions
Combine the tomatoes, pineapple, avocados, onion, cilantro, lime juice, red pepper flakes and garlic salt in a medium bowl. Add pepper to taste.

Dark Chocolate covered footballs!!
Use cacao dark chocolate chips for melted chocolate and for the white frosting use fat free sugar free white chocolate pudding mix with non fat plain Greek yogurt and a little liquid sweetener.

Pico de Gallo Salsa

Servings: 4 servings
Time: 10 minutes

...

• 4 medium ripe tomatoes, chopped 
• 1/4 cup finely chopped white onion 
• 2 chile peppers, mild or hot, seeded and finely chopped 
• 2 tbsp chopped bell pepper 
• 1 clove garlic, minced 
• 1/4 cup finely chopped fresh cilantro leaves (no stems) 
• 2 tbsp fresh lime juice 
• salt and pepper, to taste
In a bowl combine all ingredients. Let it marinate in the refrigerator at least an hour for best results.

 Nachos with Turkey/Black Beans

Servings: 4 • Serving Size: about 14 chips
Estimated Calories: 347 • Fat: 9.4 g • Protein: 27.1 g • Carb: 40.6 g • Fiber: 7.1 g

Ingredients:
4 oz baked corn tortilla chips 
8 oz 99% lean turkey breast 
1 tsp cumin 
1 tsp garlic powder 
salt and pepper 
1 can of organic black beans 
1 1/3 cup freshly shredded Monterary Jack cheese 
2 cups pico de gallo salsa (recipe to follow) 
1/2 cup greek non fat yogurt 
2/3 cup fresh cilantro 
jalepenos


Directions:
Preheat oven to 425°. Place 1 oz (about 14) chips on four oven-proof dishes or one large baking sheet.

Heat a large nonstick sauté pan over high heat. Add turkey. Season with cumin, garlic powder, salt and pepper and sauté until cooked through, breaking up meat into small pieces with a wooden spoon. When cooked, add beans and mix well.
Spoon the turkey mixture over the chips and sprinkle the cheese on top. Bake until cheese melts, about 6 minutes.
Remove the nachos from the oven, top with pico de gallo salsa, yogurt, cilantro and jalepeño. Serve immediately.

Strawberry Oat Bars

Ingredients:
Filling
2 Tablespoons cornstarch...
2 Tablespoons warm water
2 cups finely diced strawberries
1/4 cup maple syrup
1 Tablespoon granulated organic sugar cane or substitute a sweetener of your choice


Oatmeal Base + Topping
2 and 1/4 cup quick oats (not whole rolled oats)
1 teaspoon ground cinnamon
1 cup unsalted almond butter (or peanut butter or sunflower seed butter)
1/4 cup maple syrup
1/4 cup apple butter*
1 large egg, beaten
1/2 cup sliced almonds


Directions:
1.Make the strawberry filling first by mixing the cornstarch with the warm water until it all of the cornstarch has dissolved and there are no more clumps. It should resemble milk. Set aside. Combine the strawberries, maple syrup, and sugar together in a small sauce pan over medium heat. Bring to a boil and stir well. Remove from heat and stir in the pre-mixed cornstarch. Whisk until all clumps are gone and set aside to thicken and cool.

2.Preheat oven to 325F degrees. Line an 8x8 baking pan with aluminum foil with enough overhang on the sides for easy removal. Set aside.
3.Make the oat crust/topping: In a large bowl, combine the quick oats, cinnamon, almond butter, maple syrup, apple butter, and beaten egg. Mix until all of the oats are moistened and the mixture is thoroughly combined. Reserve 1/2 cup of the oat mixture. Press the remaining oat mixture into prepared baking pan. Make sure it is firmly pressed down and even. Spread the strawberry filling on top. To the reserved 1/2 cup oat mixture, add the sliced almonds. Crumble this over the strawberry filling and, using the back of a spatula, press the topping down firmly into the strawberry filling. You want to make sure it sticks well.
4.Bake for 25-30 minutes. The topping will be lightly browned. Allow to cool completely before cutting into squares.
5.Makes 9-12 squares, depending how large you cut them. Squares stay fresh covered tightly at room temperature or in the refrigerator for up to 5 days. Bars freeze well, up to 2 months.
*You may use pumpkin butter, mango butter, or any other fruit butter to replace the apple butter. The bars won't be as moist if using applesauce instead of apple butter.

Commercial Fishing

Growing up my dad was a Commercial Fisherman. Most people had no idea what that was when I was a kid, and to be honest, what it meant to me was racking and baiting…but no one knew what that meant either.

Commercial Fisherman (Freshwater)- Any person who takes freshwater fish or frogs by any lawful method prescribed by the Florida Fish and Wildlife Conservation Commission (FWC) for purpose of sale. A Commercial Fishing License is required even for use of trotlines of 25 hooks or less when fish are taken for purpose of sale. (our trotlines had 2,500 hooks)

As a fisherman, my dad would run trout lines for a living. He caught fish, mainly catfish, him and my brother would clean and skin the fish, and then my dad would sell them to a local fish market. As a family we would rack the lines and bait them. Most of the time we baited with shad or shrimp, but sometimes we used tin foil or soap. Back then it seemed completely normal because it was what our dad told us to do, but when I tell people we baited with tin foil and soap, I usually get an odd reaction. Hey, don’t knock it ‘til you have tried it, it works.


I loved going on the lake with my dad. Getting up really early, stopping at the store on the way…the smell of the water, and the engine as it started. On a few occasions, my dad would let me get out and go shrimping with him…not that kind of shrimping, I’m talking bait here. I am pretty sure he thought I was gator bait, so he really didn’t let me do it often. Then there were the cattails. Not sure why I was so fascinated with those, but it was really cool when dad would let me pick one and take it home. Going on the lake is probably one of my fondest memories of my dad and I as a kid.

I hated racking and baiting! Pretty sure my dad didn’t like me as a racker anyway, I put more knots in the lines than one person can imagine. I felt like my friends got to play while I was doing chores. (what kid wants to be home doing chores) I loved it when my friend Stacy would come over and help. I’m not sure why she thought it was fun or if she just did it so I got done quicker... but we probably did more talking than helping anyway. She was the best friend, so she probably just did it because I was. :)
I didn’t really realize at that age that I was actually helping support our family. My dad needed those lines racked and baited so he could catch fish and provide for our family. So although I kinda hated it back then, I am sure it was the foundation for my work ethic and responsibility as I got older.
This is my dad and Rick, but as you can see, our dad fished our whole lives. Talk about a boat load of fish!

What does a rack look like (easy fellas not that kind of rack):
Typically, for one line of hooks we used 5 or 6 racks…so imagine that ‘box’ 5 or 6 layers high. (using 2,500 hooks) Once all of the lines were racked then we could bait, so usually it was a 2 day process. Dad usually put 5 lines out each trip. My dad was a commercial fisherman for many years and fishing is still his favorite hobby. I’m thankful for my hard working dad, the time we spent together on the lake, the work ethic he instilled in me, and our continued love for fishing together.

He even built his own boats :)

The Central Florida Zoo ..things are about to get CRAZY!

I had no idea the Central Florida Zoo was so cool! One of my Best Friends is getting married and our last hooray..The ZOO! :)

Now, I know what you might be thinking...the ZOO??? Yes, really the zoo. Now if that's not wild, crazy, and scary don't know what is!









We discovered there were actually some other pretty cool things there to do too. I think if the zoo stepped up its advertising they could really be banking! Rhino Petting $5, Giraffe Feeding $5, Camel rides...zip lines...what else could a Bachelorette want?? Strip clubs got nothing on this!

It was pretty interesting reading some of the facts posted throughout the park, and pretty darn shocking to see the size of some of these animals as well!! Can you imagine seeing a Beaver that is 6 feet long and 3 feet tall?? What were these things eating?

 
We were obviously very humored by the Dinosaur exhibit too!
 



Rhino petting was $5, just $5 and we pretty much had then Rhino's all to ourselves. There skin is very very hard to the touch, but they do have folds in their skin which are actually really soft and they didn't seem to mind us all up in their folds. :) We were told these areas are soft because they are not exposed to the elements. We were also told they don't over eat. They eat until they are full and stop, and have 3 meals a day. I was surprised more people weren't taking advantage of the petting, it was fun seeing the animals up close and getting to talk to the caregivers.
 




Next Giraffe feeding, you guessed it...$5! You get 3 leaves of lettuce and can hang out in the feeding area as long as you want. This felt a little more interactive, since you are actually feeding the giraffe. Did you know a Giraffes tongue is 18 inches long??
Before letting on lick me I asked if it was like a cats tongue..Melissa's response "No"...well, she lied!
 

And you're never to old for the play ground...I don't care who ya are! I did have a kid tell me I couldn't help him across the monkey bars because girls are not strong...excuse me kiddo..HAVE YOU SEEN THESE PIPES??



Last on our list was Zip Lining. I had zip lined before but it was a first for Melissa and the real reason we ended up at the zoo in the first place. We got a  brief training on how to hook our clips and how to break, you do a test zip, and if you pass you are off! No helmets, no one working the zip stations, just guides down below (in most cases) that you could yell to if you got stuck or had a question. This part of our journey was fun, exciting, scary, and strenuous. I actually ended up considering this my exercise for the day. We spent about 2 hours scaling platforms and zipping through the zoo. Encouraging each other, snapping pics, laughing, sweating, swearing, having a blast like we do every time we hang out!!
